The Story Behind Plankton Rice

 

Ángel León’s pioneering work at Aponiente has earned three Michelin Stars and a Michelin Green Star for its commitment to sustainability. His philosophy is simple yet radical. The ocean can feed us in ways we have barely imagined. He has turned ocean research into high cuisine, discovering new sea ingredients, cultivating marine plants and using previously overlooked marine products.

Plankton Rice is his signature creation. By using pure marine phytoplankton, packed with protein, fibre and omega 3 fatty acids, he brings the flavour of the ocean directly to the plate while reducing reliance on conventional seafood. After years of research, León became the first chef in the world to obtain authorisation to use 100 percent natural food grade phytoplankton in cuisine.

His groundbreaking research has also focused on cultivating eelgrass, a marine plant that produces small edible seeds behaving much like rice or quinoa. These grains absorb the flavour of the sea and offer potential as a new model of sustainable food production. Eelgrass salt water meadows require no freshwater irrigation, pesticides or arable land, resources heavily consumed by conventional rice and cereal crops. They also sequester large amounts of carbon dioxide from the atmosphere, making them a powerful ally in the fight against climate change.

LUZ will host Stars of the Sea, a world class culinary journey on 29 December 2025, featuring both Chef León and Juan Ignacio García Racionero, known as Chef Nacho, LUZ’s chef de cuisine. Organised by Meliá Hotels International, the event will showcase León’s marine philosophy alongside Nacho’s Spanish tapas with soul. It is open to the public but with limited seats available by registration only.
