Double Ikat Restaurant at Renaissance Bali Uluwatu Resort & Spa proudly presents Nusantara Foraged Feast, an exclusive six-course culinary collaboration honoring Indonesian Independence Day through a vibrant celebration of Bali’s spice heritage, wild-foraged ingredients, and the abundant natural larder of the archipelago.

Taking place on Monday, 17 August 2026, the one-night-only dining experience brings together Executive Chef Wisnu Adiyatma and Made Masak, a Nomadic Culinary Artist & Forager, to reinterpret Nusantara cuisine through a contemporary lens, inspired by locally sourced ingredients, the vibrant heritage of Balinese spices, and the art of foraging.

United by a shared passion for Indonesia’s culinary identity, Chef Wisnu’s refined approach to regional cuisine meets Made Masak’s deep knowledge of indigenous botanicals and wild ingredients. Together, they have crafted a thoughtfully curated six-course menu featuring locally sourced seafood and premium meats, seasonal foraged ingredients, and aromatic Balinese spices, each course celebrating the diversity and richness of Indonesia’s culinary landscape.

“Indonesia’s culinary heritage is incredibly diverse, and this collaboration is an opportunity to honor those traditions through a contemporary approach,” said Executive Chef Wisnu Adiyatma. “By combining locally sourced seafood and meats with the depth of Balinese spices and the uniqueness of foraged ingredients, we hope to create a dining experience that is both familiar and full of discovery.”

More than a dining experience, Nusantara Foraged Feast reflects the philosophy of foraging as a meaningful connection between people, nature, and culture. By embracing seasonal harvests, native botanicals, and responsibly sourced local produce, the collaboration highlights sustainability while honoring Indonesia’s culinary traditions through modern craftsmanship.

“Foraging begins with understanding nature and respecting what each landscape has to offer,” said Made Masak, Nomadic Culinary Artist & Forager. “Indonesia is home to countless native herbs, botanicals, and edible plants that are often overlooked. Through this collaboration, I hope to reconnect people with these ingredients and show how they can elevate Nusantara cuisine while celebrating the richness of our natural environment.”

Set against the panoramic backdrop of Uluwatu, Double Ikat provides an intimate setting for this special celebration. Renowned for its contemporary interpretation of Indonesian cuisine, the restaurant continues its commitment to showcasing the country’s culinary heritage through meaningful collaborations, locally inspired ingredients, and immersive dining experiences.

“At Double Ikat, our vision is to celebrate Indonesia’s culinary identity through meaningful collaborations and authentic storytelling,” said Satria Gamita, Director of Beverage & Food. “Nusantara Foraged Feast brings together exceptional talent, local ingredients, and the traditions of Indonesian cuisine in a way that is both innovative and deeply rooted in heritage. We look forward to welcoming guests for an unforgettable celebration of Indonesian Independence Day.”
